Southwestern Egg Rolls, Barbacoa Tacos, Asian Quinoa Meatballs

Produce
2 onions
2 1/2 cups baby spinach
2 jalapeƱos
Egg roll wrappers
Garlic
Green onions
2 Limes (1/4 cup fresh lime juice)
3 bay leaves
Cilantro (garnish)
Lettuce cups (or tortillas for Barbacoa)

Meat
1 lb. Chicken breasts (diced)
3 lbs. Chuck Roast cut into 2 inch cubes
1 lb. Ground turkey

Dairy
Pepper jack cheese
1 egg

Pantry
1 can black beans
Cumin
Chili powder
Chipotles in adobo sauce
1/2 cup beef stock
Mexican oregano
Ground cloves
Apple cider vinegar
Tortillas
Quinoa (3 /4 cup cooked)
Soy sauce
Sesame oil
Cornstarch
Brown sugar
Sriracha sauce
Sesame seeds (garnish)

Frozen
1 cup frozen corn
