Thai Curry Spaghetti Squash, Croc Pot Chicken & Tomato Soup, Mexican Stuffed Shells

Produce
Spaghetti Squash
Red Bell Pepper
Sugar Snap Peas 
2 Onions
Basil
Green Onion (for garnish)
Garlic

Meat
1 Chicken breast thinly sliced
3-4 Chicken breasts (or a mix of thighs and breasts)
1 lb. ground beef or ground turkey

Dairy
Cream Cheese (4 oz.)
Monterrey Jack or Cheddar Cheese (2 cups)
Sour Cream (for toppings for shells)

Pantry
Chicken broth
Red curry paste
2 cans Light coconut milk or regular if you prefer
Cornstarch
Taco seasoning
Salsa
Taco Sauce (I like the Frontera grill ones)
Jumbo Pasta Shells
Italian Seasoning
Tomato Paste
Tomato Sauce (3-4 cups)
Diced Tomatoes

Chili Shrimp Stir Fry, Tomato Soup, Baked Dijon & Lime Chicken

Produce
1 tbsp grated peeled fresh ginger
1 pound asparagus
1 chili pepper
3 cloves garlic
1 bell pepper
1 sweet onion
2 bay leaves
1 Lime
1 pound green beans 

Protein
1 lb large shrimp
8 chicken thighs

Dairy
unsalted butter
1/3 C heavy cream

Pantry
soy sauce 
sherry (cooking wine)
sesame oil
salt and pepper
Brown Rice
EVOO
28oz. San Marzano whole peeled tomatoes
Chicken Broth
Oyster Crackers
Dijon
Light Mayo
Parsley

(I served it over Brown Rice)

(I double this...but that's b/c Marty and I are pigs.  I have only listed ingredients for a single recipe.  We also love oyster crackers in our soups!)

Cashew Chicken, Almond Glazed Chicken, Parmesan Crusted Tilapia

A few notes - for the cashew chicken, if you don't have garam masala, just use curry and cumin seasonings for an indian flavor, but you can get garam masala at World Market.  For the tilapia, at the end it calls for granulated garlic, but you can just use garlic salt if you want the extra flavor.  I don't really ever have granulated garlic on hand.
