Slow Cooker Enchilada Quinoa Soup, Zucchini Rice Casserole, Jalapeño Popper Chicken

Produce
2-3 Yellow onions
2 Red bell peppers
1 Green bell pepper
Garlic
Avocado (for garnish)
2-3 Zucchini and or yellow squash
2 Jalapeños

Meat
8 oz. chicken or turkey sausage
4-6 boneless chicken breasts
3 slices bacon

Pantry
Quinoa
Vegetable broth
Long grain brown rice
3 cups chicken stock
1 can Rotel tomatoes
1 8oz. tomato sauce
Chili powder
Cumin
1 can black beans
1 can pinto beans
Pickled jalapeños
Ritz crackers for topping or panko bread crumbs

Dairy
Monterrey Jack or Pepper Jack cheese, shredded (2 cups plus some for garnish)
1 cup shredded cheddar cheese
1 1 /2 cups low fat milk
4 oz. reduced fat cream cheese
1 8oz. cream cheese
1/2 cup mayo or greek yogurt

Freezer
2 1/2 cups frozen corn

Shredded Mexican Pork, Tex Mex Chicken & Rice Soup, Brown Sugar Brisket

Produce
Garlic
2 Onions
Lettuce cups or tortillas for shredded pork
2 veggie sides

Meat
1-1 1/2 lb. pork roast
1 lb. chicken breasts
1 3-5lb. brisket

Dairy
Shredded cheddar cheese (garnish)

Pantry
1 1/4 cups enchilada sauce
1 can Rotel tomatoes
1 can tomato soup
1 package taco mix
2 cups chicken stock
Instant brown or white rice
1 can corn or 1 cup frozen corn
Brown sugar
4 cups Apple juice
Yellow mustard

Balsamic Pork Tenderloin, Simply Great Chicken, Asian Mixed Rice Cashew Chicken

PRODUCE
Pineapple chunks
Lemons for juice

MEAT
A package of 2 pork tenderloins (about 1/2 lb ea.)
About 3 1/2 pounds boneless, skinless chicken (I've used both thighs and breasts)
1 (5 ounce) chicken breast filet, sliced to strips

PANTRY
garlic powder (or 1 T sauteed minced garlic)
onion powder
oregano
thyme or rosemary
parsley
salt & pepper
balsamic vinegar
extra virgin olive oil
1 ( 0.7 ounce) packet of dried Italian dressing mix (such as Good Seasonings)
brown sugar
roasted red peppers
brown rice
soy sauce

OTHER
cashews (raw) but you could use roasted
bag of frozen peas
