Stuffed Eggplant, Bourbon Chicken, Lemon Poppyseed Chicken, Thai Soup

2 Eggplant
3 Onion
Garlic
Spinach

Red Onion

Parsley
1 red bell pepper (thai soup)
fresh ginger (thai soup)
Lime  (thai soup)
Cilantro (thai soup)

Meat
Chicken Sausage Links or Ground Italian Sausage
1 1/2 to 2 lbs of boneless skinless chicken thighs
6 chicken breasts (2 of these for thai soup)

Pantry
Capers
Tomato Sauce/Marinara Sauce of Your Choice (use this for the eggplant instead of making it from scratch or use your own recipe).
Bread Crumbs
Pasta
soy sauce 
Olive Oil
Vinegar
Bourbon
Brown Sugar
Ground Ginger
Poppy Seed Dressing
Chicken Stock (thai soup)
Coconut Milk (2 cans) (thai soup)
